1.材料

■麵粉 9 安士
■鹽 1/8 茶匙
■糖霜  2 安士
■牛油 5 安士
■花奶 1 安士
■蛋黃 1個,蛋汁, 蛋 3隻
■熱水 8 安士
■花奶 1 安士
■糖 3安士, 吉士粉 1湯匙, 鮮奶 3湯匙

2.做法

■將牛油置一室溫回軟,將低筋麵粉、砂糖和鹽混合,篩入蛋糕盆內,將牛油、蛋黃和水倒入
■利用膠刮板和手將材料充分混合攪勻及搓至成麵糰
■取出保鮮紙把麵糰包好,放進冰格冷藏3小時
■取出麵糰,撒下少許麵粉在台面,利用大粉轆將麵糰壓平
■粉糰用9頭鋼蛋形牙級取出模形,再用手掌按扁,放入烘焙模內。
■水與糖同放鍋中,以慢火煮至糖溶;雞蛋拂勻,加入花奶和零呢拿油
■倒入蛋液約8分滿,然後焗20分鐘即成。


3.用具

■可選購不同種類蛋糕盆,膠刮板,大粉轆及烘焙模內,然後按以上製法做蛋撻。
