1.材料

菠蘿皮
■低筋麵粉160克
■牛油/專用酥油32克
■豬油80克
■特幼砂糖112克
■蘇打粉0.8克
■泡打粉0.8克
■臭粉半茶匙
■淡奶2茶匙
■雞蛋9.5克
■水6.5克

麵包
■高筋麵粉625克
■雞蛋50克
■特幼砂糖150克
■豬油50克
■酵母5克
■淡奶25克
■水300克

2.做法

菠蘿皮
■將糖,牛油/專用酥油、豬油、脫淡奶用湯拂慢速攪拌均勻
■將蘇打粉、泡打粉、臭粉倒入撥麵粉盆,雞蛋加入用木漿拌勻
■再倒入低筋麵粉拌勻,隔夜後使可使用

麵包:
■將糖溶於水中
■加入雞蛋、淡奶、麵粉、牛油、豬油及酵母用手搓成麵糰,麵糰需搓至光滑
■將麵糰放在碗內,用保鮮紙蓋好及讓它發酵45分鐘
■將已發酵好的麵糰用刮刀分成塊狀,用手滾圓,再用布蓋好讓鬆弛15分鐘
■將麵糰搓成所需形狀,再讓它醒醱1小時
■將菠蘿皮放在麵糰面用油掃搽上蛋汁,焗約12-15分鐘即成。


3.用具

■可選購不同種類木漿,湯拂,撥麵粉盆,刮刀及油掃,然後按以上製法做菠蘿包。
